How about a good healthy soup? We all love soup in the winter and when it sticks with you it makes for a good day. I love barley so I was always making beef barley soup but decided I would make it a little healthier by using chicken instead. If you try this please comment to let me know how you liked it.
Ingredients –
2 cooked cut up skinless chicken breasts (great way to use up leftover chicken)
1 cup cut up celery
1/2 cup diced onion
2 cups diced carrots
1 cup organic barley or pearled barley
24 oz Reduced sodium chicken broth
Add water to bring to consistency
Combine Chicken broth, celery, onions and bring to a boil, then add barley, carrots and chicken and bring back to a boil. Reduce heat and cook for about 1-1/2 hours until barley is tender stirring occasionally. Add water to bring to consistency Enjoy a deliciously warm creamy soup.
